Sodium acetate, also known as sodium acetate, is a colorless and odorless transparent monoclinic crystal system columnar crystal, or white crystalline powder. It is easily weathered in air and flammable, dehydrating to anhydrous substance at 123ºC. Soluble in water and slightly soluble in ethanol. A 1.3% aqueous solution has a pH of 8.87, ensuring high performance in various industrial applications.

In the food processing industry, sodium acetate serves as a buffer for flavoring agents and meat preservatives. It effectively controls sticky phenomena caused by fungi in bread production. Beyond food, it is widely used as a textile printing and dyeing assistant (mordant), a buffer for the photographic industry, and a chemical intermediate. Its unique thermal properties also make it ideal for hand heaters and medical hemodialyzers.
